Coconut and Paprika Pork Stroganoff with Broccoli Rice | Mindful Chef

This scummy little masterpiece from Mindful Chef offers low carb, high protein, and aside from anything else, doesn’t require me to attack it with cauli rice, because I got to actually make my own BROCCOLI rice!! How about that?!

The flavours of the stroganoff itself are rich, hearty, and complimented so well with the light, zesty broccoli as it’s counterpart. I love the use of the coconut cream for the stroganoff base, as actually I’ve never used it in cooking before, so this was such a welcome introduction!

An excellent meal for an evening dinner party to show off what sounds like a very complex and fancy recipe effortlessly to your guests, or likewise, a delicious and comforting lunch which is filling and warming, yet doesn’t rely on starches and heavy carbs to make you feel cosy inside.

Ingredients to feed 2 people (halve if eating solo):

  • 2 x 170g pork loin steak.
  • 1 garlic clove.
  • 1 red onion.
  • 20g creamed coconut.
  • 150g chestnut mushrooms.
  • 2 tsp of smoked paprika.
  • 1 tsp of wholegrain mustard.
  • 1 broccoli.
  • 1 lemon.
  • Handful of parsley.
  • Salt.
  • Olive oil or any cooking oil of your choice.

Method:

Finely chop the mushrooms, red onion, garlic, parsley, all in one big preparation swoosh. Set the parsley and mushrooms to one side

Slice the pork loin steaks into thin strips. That’s just about it for prepping, you know! All but the broccoli, but we’ll get to that later on. Before the cooking begins though, grab a jug and melt the creamed coconut into 100ml of boiling water.

Cook!

  • Heat 1 tsp of oil in a medium sized pan on a medium heat, and when up to temperature, throw in the chopped red onion and garlic for 3 minutes.
  • Add the sliced pork thereafter, and cook for 5 minutes until golden. Then add the chopped mushrooms and smoked paprika, and cook for another 3 minutes.
  • Add in the creamed coconut and wholegrain mustard to the mix, and season with salt and pepper if you wish. Bring down the heat to a simmer for 5-10 minutes until the pork is cooked through fully. 
  • Squeeze in half a lemons worth of juice at this stage.

Broccoli Rice.

You know how obsessed I am with cauli rice, right? Well how happy was I to see a recipe with broccoli rice?! So happy. Making it is as simple as this:

  • Grate the broccoli into a rice consistency. This means using quite a small-medium grater option. Be aware that this can take quite a while if doing manually. Broccoli is more of a tough devil that I thought, and you need a fair bit of elbow grease!
  • Once grates, pop in to a pan on a medium heat with 2 tbsp of water, the other half of the lemon’s juice, and a pinch of salt. Stir for 4 minutes until tender.
  • Mix half of your chopped parsley through the broccoli rice and get ready to serve!

Serve.
